Chef Shayna: Sweet Potato Toast

Sweet potatoes and smoked salmon, can the two go together?

Chef Shayna from the Young Chef's Academy in Fresno gives us a recipe that puts these two items together to make Sweet Potato Toast.

Sweet Potato Toast

- Large Sweet Potato, 1-2

- 1 Avocado, smashed



- Small package Smoked Salmon

- 1/4 red onion, sliced thin

- Cherry tomatoes, sliced

- Trader Joe's Everything But the Bagel Sesame Seasoning

INSTRUCTIONS:

Preheat oven to 350 degrees.



Cut Sweet Potatoes into 1/4 inch slices. Place in a single layer on a baking sheet.

Bake for 20 minutes until softened.

At this point, they can be stored in an airtight container for up to a week to be used later.

TO PREPARE TOAST:

Toast sweet potato slices in a toaster oven.



Spread on smashed avocado and add a few pieces of smoked salmon. Layer on sliced tomatoes & onion and sprinkle on Bagel Sesame Seasoning.
